Peanut Butter Cookies

Ingredients:
3/4 cup soft butter or margarine
1/4 cup peanut butter
1/2 cup of granulated sugar
1/2 cup of brown sugar, firmly packed
1 egg
4 Weetabix, crushed
1 cup all-purpose flour
pinch of salt
Directions:
1. Beat the butter, peanut butter and sugars together until soft and creamy. Beat in egg.2. Stir together crushed Weetabix & regular flour and salt. Add to butter mixture and beat until thoroughly combined.
3. Divide mixture into about 30 balls and place on greased baking sheets. Flatten slightly with a fork and bake at 375 F for 10 - 12 minutes or until golden brown. Cool on wire racks. Store in airtight containers. Makes 30 cookies.
Yield: 30 cookies
Comments:
Note: Cookies freeze well. For variety add 1/2 cup chocolate chips or toffee bits or chopped peanuts.
