Crunchy Herb Potatoes

Ingredients:
1/4 cup (50 ml) vegetable oil
2 tsp (10 ml) crushed garlic
3 large potatoes (1 1/2 lbs. (750 ml)) peeled and cubed in " (2.5 cm) pieces
2 Weetabix, crushed
1 tbsp (15 ml) mixed dried herbs (rosemary, thyme, basil, oregano)
Salt & Pepper to taste
Directions:
Heat oil and garlic in a pan over low heat. Saute 2 minutes. Remove from heat and add potatoes. Toss well to coat with oil. Drain off excess oil into 9" x 13" (3.5L) baking pan.Meanwhile, thoroughly combine crushed WEETABIX, herbs, salt and pepper in a large plastic bag.
Spoon potatoes into plastic bag and shake well until potatoes are thoroughly coated with WEETABIX.
Pour into 9" x 13" (3.5L) pan and bake at 375F (190 C) for about 30-35 minutes or until potatoes are cooked and nicely browned. Serve immediately.
